Breakfast Burritos

It’s important to me that my family eats a good breakfast before heading out to seize their day. But I don’t always have the time nor the energy to wake up earlier to cook. 

So I started making breakfast in bulk ahead of time. They can be frozen to stash for weeks or kept in the fridge to grab throughout the week. Either way, they heat up perfectly and tastes as good as they did freshly made.  

Use whatever items you love to have for breakfast then portion and roll them up into a soft flour tortilla. My family’s favorite is sausage, egg, cheese, breakfast potatoes, and sautéed onions and peppers. Individually wrap and store in the fridge or freezer and you won’t have to worry about making breakfast for a while. Make a variety to keep it interesting.  

They’re great to grab on your way out the door for work or for a family overnight getaway to save a little cash. Or even for “breakfast for dinner”. Try pouring a little salsa verde on top to kick it up a notch.
